Ingredients
- 1 kg Kırnı chicken wings
- 2 tablespoons olive oil
- Juice and grated zest of 1 lemon
- 3 garlic cloves, crushed
- 1 teaspoon dried thyme
- ½ teaspoon salt
- Black pepper, and chilli flakes if you like
Method
- Heat the oven to 200 °C. Pat the wings dry with kitchen paper; dry wings crisp up better.
- In a large bowl, mix the olive oil, lemon juice and zest, garlic, thyme, salt and spices.
- Coat the wings well in the marinade; if you have time, rest them in the fridge for 30 minutes.
- Spread them out on a lined tray and bake for 40–45 minutes, turning halfway.
- For the last 5 minutes, switch the oven to grill to brown them. They are done at 74 °C inside, with clear juices.
- Serve hot with fresh lemon wedges and a green salad.
Tip
Do not crowd the tray. With space between them, the wings roast in hot air instead of steaming, and come out crisper.
